Microwave Caramel Sauce

This caramel sauce is to die for! I mean, really! It has 3 common ingredients and it is ready in the microwave in 5 minutes…yes, 5 minutes. Not only is it simple and quick, but the richness of the flavor is fantastic! I have made a lot of caramel in my day and this one takes the cake. No standing over a stove stirring for an eternity with a candy thermometer, no turning the caramel into a brick that will chip your teeth – just ooey gooey caramel.

Now I’m kinda craving it again, which really is a problem because I eat this stuff all of the time and really blame my current jean tightness on the goodness off the caramel and the ease with which my husband and kids can make it. They are just so cute when they make it—who am I to say no? I mean, it really would be rude to turn it down, right?

When I first thought about this recipe it was for my students at Sprouts. I wanted a caramel recipe for little kids during the fall to go with all of the apple things I had planned. So many of my students are younger and they can’t safely stand over a stove, but they totally can add some ingredients to a bowl and push a couple of buttons on the microwave (parents may only need to help with removing the warm bowl from the microwave).

That is how so many of my recipes come to be. I ask myself how can I make this super easy for a little kid to do mostly, if not entirely, on their own? This one is super easy! The only thing you have to be careful about is that microwaves are different from one brand to the next. I have made this in other kitchens and one time even though I used the exact same cook time, it did not turn out well! So just be mindful and know your appliance. For instance, I know my oven is on the hot side so I always adjust cook times accordingly.

Now, hurry up and go make you some caramel sauce and pour it on some ice cream, or brownies, or apples, or pie…need I go on???
