I love writing recipes and being creative in the kitchen, but every so often I have my own version of writers block and I just get stuck. When that does happen, I am lucky enough to have a friend who is creative it the kitchen as well and she always has great ideas. The idea for this recipe for Holiday Pinwheels came from my friend, Abby.

I believe the original recipe is from Ocean Spray but I tweaked it quite a bit so that it would meet the needs of my family and what my kids wanted. The original doesn’t call for turkey or spinach and it has less feta in it, but I wanted to kick the flavor up a bit and add some protein because I also thought this would make for a great school lunch. I also used organic baby spinach and loved that I could sneak a good veggie in for the kids and then I wrapped everything in a whole-wheat tortilla. Instead of green onions I used chives because they still add great flavor but it is a bit of a milder flavor compared to that of green onions…which ultimately means that my kids are more inclined to eat it.

These Holiday Pinwheels are super easy to make and they provide good nutrition as well. My kids absolutely love, love, love the way they taste! My husband and I really like them too! I think they would be a great addition to your spread this holiday season!
