Preheat oven to 350 degrees. Cut the crusts off the slices of bread. Using a rolling pin, flatten the bread. Combine the softened cream cheese, powdered sugar, and vanilla, and then mix until thoroughly combined. Place 1 -1 1⁄2 Tablespoons of the cream cheese mixture on the rolled out slice of bread and carefully spread. Roll up the bread. Dip each rolled piece of bread into melted butter, and then into cinnamon and sugar mixture. Place cinnamon and sugar-covered rolls on an ungreased cookie sheet. Bake for 15-20 minutes or until they are golden brown.
