Mini Corn Dog Muffins

Ingredients:

  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • 2/3 cup sugar
  • 1 teaspoon salt
  • 3 ½ teaspoons baking powder
  • 1/3 cup vegetable oil
  • 1 cup whole milk
  • 1 egg, beaten
  • 1 package Lil Smokies

 

Directions:

Preheat oven to 400 degrees. Spray mini-muffin pan with cooking spray or grease with butter. In a large bowl, mix together flour, cornmeal, sugar, salt, and baking powder. Add vegetable oil, milk and beaten egg and mix well. Put 1 Tablespoon of the cornbread batter in each muffin cup. Trim the ends off your Lil Smokies to make them fit in the muffin cup properly. Place one Lil Smokie in the center of each muffin cup. Bake for 8-10 minutes or until the cornbread is golden brown. Enjoy!
