Homemade Goldfish Crackers
Ingredients
- ¾ cup sharp cheddar cheese
- ¼ cup Parmigiano Reggiano
- 4 Tablespoons cold butter, cubed
- 1 cup flour (all-purpose or whole wheat)
- ¾ teaspoon kosher salt
- 4-5 Tablespoons water
Directions
Preheat oven to 350 degrees. Add all ingredients except water in food processor and pulse several times. Add water 1 Tablespoon at a time just until the mixture looks moist and crumbly and pulse several times. Take the dough out and form it into a ball. Place it in plastic wrap and chill in the freezer for 10 minutes. After 10 minutes, on a floured surface, roll the dough as thin as you can. Mine were about ¼” thick. Bake for 15 minutes, or until crispy.
*The longer you bake these crackers and the thinner you roll them the crispier they will be. These are cheesy biscuit-like crackers, not quite as crispy as store bought. You can play with the seasonings to create your own cracker. Maybe your kiddos love pizza Goldfish—you could try mozzarella cheese, a pinch of basil and oregano. So many fun flavors to try!
