Turkey and Veggie Sammies

Ingredients

  • 1 Tablespoon olive oil
  • ¼ medium onion, diced
  • 1 large green pepper, diced
  • 1 lb organic lean ground turkey
  • 2-3 garlic cloves, minced
  • 2 small zucchini, diced
  • 14 ounce crushed San Marzano tomatoes
  • Salt and pepper to taste
  • 2 Tablespoons chopped parsley, plus more for garnishing
  • Feta cheese, for topping
  • 2 cups dry rice, prepared according to package instructions (we love Texmati, Basmati or brown rice)

Directions

Cook rice according to package directions. Heat olive oil in a large skillet over medium heat. Add onion and green pepper and sauté until onion is translucent. Add turkey breast. When turkey breast is almost done and only a little pink remains, add garlic and zucchini. Cook for 1-2 minutes and then add tomato sauce, salt and pepper. Simmer for 10-15 minutes. Add chopped parsley and stir. Serve meat mixture over rice and top with crumbled feta (the feta is a must, makes it so delicious! If you don’t like feta, you can try parmesan). Garnish with chopped parsley.
