Strawberry Lemonade

Homemade Pumpkin Pudding

Ingredients:

  • 1/2 large onion, diced
  • 4 cloves garlic
  • 1 small green pepper
  • 1 1/2 pounds lean ground beef
  • 1 28 ounce can crushed tomatoes
  • 2 Tablespoons red wine vinegar
  • 2 Tablespoons Worcestershire sauce
  • 2 teaspoons cumin
  • 1 teaspoon cinnamon
  • 1/2 cup green olives with pimento
  • 2 bay leaves
  • Salt and pepper to taste
  • Cilantro for garnish

Directions:

In a large pan or dutch oven over medium heat add 2 Tablespoons olive oil.  Add onion and pepper and cook until onion translucent and pepper is tender.  Then add garlic and cook until fragrant taking care not to burn it.  Add ground beef and brown.  Drain meat.  Add remaining ingredients and stir to combine.  Bring Picadillo up to a boil and then reduce to a simmer.  Simmer for 30-40 minutes to bring flavors together.  Serve Picadillo with brown rice and top with fresh cilantro.
